With all the new SD series radios out now, is the RDS8000 being replaced with an SD-8 version?

Yes, the RDS8000 is an older generation, but it still a current part of the line. The radio stands on it's own and is still a well-liked and popular radio. As with any radio company Sanwa is constantly working on the "next" radio, but for now, the line up is staying as is.
