1/6 scale instruments? Beyond the usual stuff you find in hobby stores, there isn't much at that scale. There is, however, some awesome scale instruments at 1/4 and 1/5 scale, made in germany:

We have a bunch of instrument graphics and will be more than happy to work with you on generating new designs for the jets. We've already finished a Strikemaster panel for a turbine kit being produced and distributed by Galtech Models in NZ.
Our stuff is accurate and VERY sharp. The only limitation will be the scale documentation available and I suppose you probably have that already.
