www.hppilots.com has Officer and Gentleman pilots as does www.ziroliplans.com. I recently bought a 1/5 german bust from Cajun r/c and am pleased. Vailly may have something also. If you want 1/6 then bluebox made/makes complete bodies, they can be found on auction. The best looking bust I have found is heavy and needs assembly and painting is no longer available - the Dave Platt figures.

Dave sent me a reply to a query just the other day stating that he did have pilot figures. 1/5 P51 driver.

Not sure about pilot busts though.

Look at Aces of Iron. They have a website and are distributed through HP Pilots.
