Default Setup for pt-19 from Hostetler plans

Can anyone share some insight on the best way to set up this model. The plans call for Airtronics servo 94510. I am told that they quit making them 15 years ago. Who makes the best servos these days for this type of application?
Also the plans show two elevator servos, one rudder, one throttle mounted in th fuselage and two aileron servos mounted in the wing. Why are two servos required for the elevators? isn't one enough? What about the flaps? what is the best way to set those up?
Any help would be appreciated.

thanks
