1 turn out on the high speed needle sounds awfully lean. Back it out to 2.5 or so and try again, forget the amount of exhaust smoke for now. Fuel and plug are probably fine though I don't like the OS...

I would say both sides on the full size have the stripes oriented forward upper to lower aft. Direction should match the nose gear doors.

Pitot tubes measure freestream (undisturbed) air velocity. Air velocity over or under the wing would be very different.

Stall speed is not always stall speed, wings stall at an angle of attack...
