You have enough experience, no problems. The Stryker is easy and forgiving to fly as long as you do not start with a 200 mph 5lb brick.
If you can master the P-51 you should have no problems....

Here is a theory: The bird was too tail heavy as you have stated, this combined with quite a bit of throw makes it twitchy. Then when you cut the throttle it probably stalled before diving....

Sorry about your plane. From the pic it seems you have a lot of throw on your elevons (long servo arms and connected close to elevons). Better have less throw and dial in some expo.

Your quickest way to get more speed is to move from 3S to 4S. Higher voltage is always better as less current will be required to generate the same amount of power.

It could be that the two pairs of holes on the stock motor has different spacing and that rotating the motor a 1/4 turn would have made holes line up. But your solution is fine too ;)

90 amps was static readings using my Eagle Tree, the battery can take 50C for about 15 seconds. Anyways I would never fly it at full throttle for that long.
