There are a lot good articles on cg on biplanes. I used a formula that I found years ago, and it came out at 4 7/8 from the leading edge of the top wing. Thats with the correct incidence on the wings...

Hi all, 1st flight was good except the tail is to small hard to pull out of dive etc. , rebuilt the tail with one from a wreaked 540, put in a 30cc gas and will let you know how it goes. had a 25cc...

Wouldn't put them on anything larger than a 90 size plane either, weight matters also as to servo selection. It wouldn't hurt to contact Horizon they may have more info on the 821 servos. Like I said...
