By all means test them!! I even test new servos right out of the box these days. I get a lot of plugs from old servos, switches and Y harness and extensions.. I just clip them off and solder them...

Yes, if you want to. I have bought new in box AM servos and used them for trainers and smaller planes. They are probably between 40 and 48 inch pounds or there abouts?
