Water Pickups - what do you recommend for performance and flow + pics of progress

I am getting close to finalising my Outlaw Jr OBL. Considering how new I am to boats being a complete noob a few weeks ago, it's been a steep learning curve and didn't realise how much is involved to get a nice fast boat.
What I have done so far is:
Fibreglass re-inforced the hull
Replaced the straight through drive to a custom cut down 3/16 Flex for a pro-boat
Made a decent Stuffing Tube with Teflon liner (not as hard as I first thought)
Added an adjustable stinger and customised a brass bushing into it for the flex to prevent water getting back washed in to the prop shaft
Got my motor sitting about the 30% mark (Hobbyking 3660 - 3180KV 90A)
Got two 65C-130 3S 11.1v Turnigy 5000mAh Lipos ready to run in a 3P setup
120A Seaking ESC supporting up to 6S as I burnt out my 160A
But my biggest concern now is water pickup and possible replacement of rudder as my current pickup on the stock knife edge rudder I don't think is enough for my motor and my original ESC and has no adjustment possibilities.
When it comes to pickups I've done some research and decided I want two pickups one for ESC and one for Motor. I also want a cool dual water effect coming out from both sides of the boat at high speed.
so:
I've looked at hull mounts and they look like they will have a major performance hit if not flush
I've looked at prop wash but that would require me to make a strut to support it and seem like a lot of hard work
Ive looked at in rudder pickups but I don't know how well the flow would be as most I see have very small intakes and susceptible to weed and grit and I will be running in salt water predominantly
I've looked at trim tab pickups which I'm urring towards as kind of make the most sense to me
I've looked at adjustable transom mounted which look nice and are another possibility as have

Rudder pickups are by far the most popular, and for good reason - they work. Prop wash pickups create extra drag, trim tabs are out of the water much of the time in a deep vee, transom mounts are draggy and too often out of the water - ditto for in-hull mounts. Don't re-invent the wheel, get a rudder pickup. You do not need a separate pickup for motor and ESC, just route to the ESC first. Dual water exits are cool, but a single is almost as cool and works great. KISS. Flush out your cooling system after each day at the beach.

Hi Guys
I am a newby when it comes to rc boats so i have just bought a genesis rc boat hull comes with:
Motor: 36-74Size 2075kv Watercooled Brushless Inrunner
esc: turnigy marine 180a
and a 4mm drive system so my question is what battery setup can i use to get max speed without breaking any of the parts i already have ?? and also ideas on the best prop ??
