Wouldn't going into a dual output gearbox just rob power?

no, not 2 motor in one gear box, i mean 2 separated motor and 2 separarted outdrive system and 2 props, just like dual engine in some out rigger out there,

A single motor setup will be faster.

A single motor setup will be better for many reasons. One, it will cost a lot less, you will not need two ESCs and two motors, two props and drivelines, two struts and two rudders. It will run much better and be a lot easier to set up with a single large motor and single prop too. Don't try to re-invent the wheel, build one the way other experienced baters have first. Then on your second big hydro you can try some exotic setups.
