Default 3 cell LiPO boats

I would like to use my existing 3 cell 2500ma packs from my airplanes and jump in to RC boats. Do you have any recommendations on a good fast boat?

Most RTR's run the equivalent of a 6cell or 2 6cell NIMH packs, so 2s or 4s Lipo.
You could make a boat and find a motor/esc that runs well with 11 volts, but that'd be a tough first step.
I have the Mini-V from Proboat, and it is crazy fast on 3s, but meant to be run on 7.2 volts. The ESC/motor are not rated to handle that voltage, and can be pushed beyond their limits unless you add water cooling or don't run for very long.
