What brushless motor and waterproof esc that I can run on 6 to 7 cells for a 26 inch V hull?

it depends what you want and what is your budget. There is quite alot of alike setups around , just surf the forum...

8L on 6 or 7 NiMh cells, using a hydra 120 or barracuda 125 and 40mm prop.

If 2 cell Lipo is used, get a 7L. With this setup 40mph is with in reach.
