On my 34" Rigger I have my sponson complete with 3/16" inner wall doubled up with 1/4" Ply. In total that's 7/16" and I plan to use wood screws to make it easy. This is also what I have done in the past.

Wood screws will hold up very well as long as they have enough meat to grab. At 1/8" that's not a lot of threads in wood.

Larger diameter screws will have a larger circumfrence which will also result in more holding power.
