More pitch generally gives more speed, but more pitch also requires more horsepower/torque to pull the additional load.
Pitch is the therotical distance that the boat will move forward with one revolution of the prop. So more pitch, more forward movement. But it takes more power to pull more pitch cause you are taking a bigger "bite".
More pitch might be good if your motor can easily launch, accelerate, and not bog in the turns with your current setup.
More pitch might be bad if the boat is sluggish, hard to launch, bogs in the turns, and it s hard to find a good needle setting.
Proper prop selection can sometimes be 25% knowledge, 25% luck, and 50% black magic. Buy and try is the key with props if you are looking for all out performance.
