Is there a way for me to filter which forums I want to see on my screen. I don't have any interests in cars and such but would love to only see planes and helis.

yup...go to each forum you want to see and click "subscribe to this forum" then you can view the custom view of just those forums in the "MyRCU" control panel. I may be adding this feature to the homepage soon so you can customize the homepage.

I just finished where you can click "view new posts for my subscribed forums only" so when you come to RCU it will show just the new posts from your forums or in your case just the plane or heli forums. this will be up in the next day or so

You can also collapse the cars forum by clicking the + or - symbol next to the major Cars heading on the homepage...this will collapse that forum and remove it from view.
