Needle valve assemblies

All needle valve assemblies seem to fit all., But what is the flat sided needles for in engine size. My old .61 has a flat one and also my new Q500 please help.

We'd like to help, but what do you mean by "flat sided needle"? Needle valves are round and have no flat sides. Do you mean spraybar?
The spraybars with flat sides were used to increase the choke area of the carburetor without having to make a carb rotor with a larger intake hole. This allowed the same carb rotor to be used in several carburetors.
Your SuperTigre G-500 may be unused, but it's not a new engine. They haven't been produced in a number of years. There are no parts available for that one.
