2.5 TRX Engine.....
I've been running 20 % nitro on the stock motor for about 1.5 gallons now. I want to increase to 30% Odonnel Fuel. Would this be ok?

Should be fine. You'll have to retune, both from switching brands and upping the nitro content. You might have to change shims under the head too, not sure.
Some will tell you that once you go up in nitro content that the engine won't run well if you try to go back down. I don't know if that's true or not but you should be aware.
I switched from Traxxas 20% to O'Donnells 20% and, after a bit of tuning, the trucks seem to run better.

Make the switch to 30% ODonnels fuel, you will really like the increase in performance, and better reliability. Dave is right though, Once you change to a higher Nitro, stick with it. It is hard to get the engine to readjust to the lower nitro again. When I made the switch to 40% White Lightning, I have never looked back.

Actually, the higher nitro content, when tuned right, will run a bit cooler. The higher Nitro fuel burns faster, which passes through the engine faster.
Also, when switching to a higer Nitro, you may want to try a colder plug.

I'm running White Lightning 40% Fuel in my 2.5, with no problems. It is so much easier to run the same fuel in all your vehicles, not to mention, it makes going to the Hobby shop a little easier... Don't have to try to remember which fuel you were getting low on. lol
