1oz'' of output (torque from servo) for every sq'' of control surface area. I.E. aileron 120 sq'' = 120oz'' of torque, Rudder 80sq'' = 80oz'' of torque

There is no magic airfoil. Aerodynamic efficiency is not relative to wing sizes/wingarea. IE, You posted a deficalt question:-)

The GWS 300C motor can draw close to 10 Amps if pushed.
The C-10 ESC is capable of 12amps. I would go with the C-20 (22amp) so your not at risk of burning up the ESC. I'm using a C-10 on the same...

The CG is at the middle/aft of the main spar. ( 6.75" to 7'') Much farther and you will be in trobble. I flew mine at 7.5'' (for the leading edge @ root) and it started becoming harry :D
