Default Charging LiPo methods

If you have a charger/balancer can you hookup batteries in series or parallel to charge 2 batteries at once as long as the charger can handle the load?

I would say you can, but it's unwise unless they are matched packs.

As Snipin Willy said, you can but it's unwise. There are chargers out there like the Hyperion 0615i that have 2 dedicated rails for 2 batteries, which is fine. Charging 2 batteries in series or parallel (especially lipos) just increases the chance that you'll run into problems like false peaking, over charge/discharge, and unbalance cells.
