Default How do you tweak in an Ultimate for 3D?

I have just finished a 62-inch Ultimate, scratch built, my own design, I used a little CG Ultimate and a little Ohio Ultimate design.

Just took my first test flight and the Ultimate flew great. Very light on the controls and good basic aerobatics capabilities.
Since I am new to the Ultimate my question is how do you tweak it in? Did I mention that I am also new to 3D?

How do I know when the CG is about right, what is the test?
How do I know if the motor is properly off set? In mono wing airplanes I know what to look for is the Ultimate the same?
Do I set high rates at all I can get or do I look for something when I fly?

I think I have an airplane that will be good 3D and I want to make sure I do it right.
