Do whatever puts the least amount of stress on the wires, and is not likely to move nor get in the way of other wires, pushrods, etc. nor get caught when you put on the cowl.

In your case I would normally mount it with the spark plug wire down as this maximizes the reach to the plug ( making plug removal easier later ), then wiretie the excess in place to a wire hold down...
