What would be a good gyro for this application?? I know the ACT Fuzzy is an option but a bit $$$..
An ACT Fuzzy is too expensive and usually used for ailerons or elevators because these GYROS control 2 servos. In my airplanes I use a plain (and cheap but very reliable) FUTABA GY240

Can I just add one in between the nose gear servo and the receiver even though its mixed to another channel ( Rudder )??
Yes, this is very common, and this is how I've done it. The nose gear gyro does not affect the rudder itself.

Is there one that can go to both in this set up?? I guess it doesnt hurt to have it on the rudder also. I could change the gain on gear down or up.
No need to do this. I would suggest you to buy the plain GY240 gyro and set it to
100% gain but with AVCS off (set at normal mode). You'll find there is no need to change the gyro gain up and down all the time. One setting at all will do the job better than you can imagine.
And in any case whatever your decision is with any gyro you may buy and install
do not set it to AVCS (heading hold mode). Should you do this your front gear will never come down during landing (gear down process) because the front wheel servo will definitely be offset.
