He could of course use two separate channels or a separate channel slaved to the retract channel. Too avoid a bit of complexity there he could use two Y cords but of course he would end up with one dead ended female.
What I would do and be my preference would be a all three servos (I would use a retract servo on the canopy also) hardwired and soldered up in a custom length three way Y. This greatly reduces additional resistance from an excessive number of plugs and I would only use one plug for wing removal.
Multiple hardwired Y setups work fine and I have done so up to six Y,ed servos for throttle with a few for three and four engine airplanes. Also have done several three ways for twin rudder and nosewheel setups.
Sorry can,t help with the canopy rail set up as I have never done that.
