You can split the cowl along its center line. Then, attach plywood tabs to one side, and drill for screw holes in the other side. The cowl can be fitted one side at a time and then fastened together.

In real planes, the cowls don't necessarily slide over the engines - they often hinge from the center line, or are removed completely.
