I may use a thinner washer so the jam nut has a few more threads to grip onto...

Looks nice but I don't have enough threads sticking out to use both of those. I'm looking at this one.

Yup, that's the one I'm talking about. The bottom of the nut and the washer have a taper to them - that's designed to do about the same thing a jam nut does.
