Default When do you use a retract servo?

I am currently building a Top Flight T-34 and have a question regarding the retracts. I am planning on having sequencing doors. I see the "retract" servos for sale and I want to know when do you use them and what is their advantages? It seems to me that they have a lot of torque, but how much torque do you need to activate a valve? Are they for mechanical retracts or something?
