That's because you've got perfect vertical when it starts rolling, but not when it stops. That is why it stops. You're either falling a little forward, a little back, or a little to the side.
As far as the prop for torque rolls, it really won't make much of a difference for the roll rate. The 11.5x4 will just give you more thrust...
