Green River

I figured that you had it finished by now, I thought I'd harass you a little about it. You are right about the all in one finishes, you can't get an even coat on everything. I use the oil based MinWax Poly (wipe-on) on most of my stands. If I want a stained finish, however, I will use an oil stain and then a separate application of clear oil poly. The oil based materials are a little messier, but they look better and last longer.
