I'm think that there may be part of your problem. My other hobby is model railroading, and the consensus is that particle board warps, shift, and degrades over time. I would get a solid or hollow core door blank and use that as your table top. I have read where by people both swear at and by each type, so there's probably not a lot of difference. Use drywall or Homasote over the door blank.
