EDFJime would be a great person to talk to about the big electric jets, he had an F-14 that he did electric but went to turbine. Good luck and welcome to jets!
Choice of Electric is due more to distance to+ flying sites than technology or cost, electric propulsion isn't going to be 75% less turbine after 19 lbs of thrust.

Most don't mind 20% off of flying time or speed vs having to travel hours or only flying on the weekends or not at all if there are no turbine fields in the area.

I've flown a 1/5th scale F-16 pretty decent authority electric so the larger models can be flown, just takes a little engineering in fan placement.

The models today are lighter and stronger now while heavy carbon cells and stable 24s ESC's allow for 40 lbs fans.
