To prevent this I simply insert a T pin in the center of the hinge. Then slide the hinge into the wing, tail etc and then slide the control surface on. Once it's in you you know that half the hinge is in each side and you also have a nice size hinge gap that's even. BTW, I also color a ceneter line on my hinges with a crayon to help the CA from soaking into the hinge on the hinge line. It helps to keep them a bit more flexible.
Something to try. It has worked great for me.
