Instead of the 540 motor that comes with he boat you could take a Graupner 600 eco race, start with a smaller prop, if the shaft allows it (is it standard M4 thread?).
Watercool the motor and the ESC, its 25 A rating should be enough (watercooled!)
Post some pics of the interior, please (so the Americans can see that the outboard is a dummy)

P.S.: You could mail Ripmax and ak them, they have a number of boats that they hop up, they (Clive Coote or his P.A )should be able to tell you what motor/prop combination is the limit for the 25 A speedcontroller.
