I'm also monitoring the temp on my ESC with a temp gun.
At one point while running my boat to determine my ESC's thermal protection limit (cut -off),I got a temp reading of 110.4 degrees Celcius. I determined this as the "cut-off" temp as my boat stopped just a few feet away from me. I managed to pull the boat next to me,(boat still in the water) took the upper hull cover off & got the temp reading.The ESC I'm using has thermal protection.
Here's some info I found while researching a possible replacement power transistor for my ESC. Maximum operating temp on average before they burn out is 150 degrees Celsius.
If you have a background in electronics what would likely to burn out first in an ESC are those smaller transistors & those tiny resistors.
