Funny you should mention the SS. Just got a wing kit and plans for a Stick 40. My son is learning to fly and thought the SS was really cool. I really enjoy the old things, too. The Stick 40 plans indicate 1.25" total at the elevator, 2.5" total at rudder, and .75" total for ailerons if so equipped. If you are using it for a trainer, I would cut the elevator travel down by about a third until it's been test flown by someone with experience. It looks a little fast to my eyeball.
