The Dakota would be an exellent choice for a starter model. I spent most of my basic beginer stick time with one I built from Joe's original plans.
It started life with an old Wen Mac on the front, was "souped" up with an old Cox 049 and ended up with a PAW 55R/C to give me many.. Yeah Many flights of Quality stick time. The kit put out byBMJR is first class. The plan is from Joe's original blueprints.
BMJR also does a stick biplane for electric.
Another Bi-plane kit that comes to mind is by "Designs That Fly".

I have flown one of these with a Norvel.061 at the SMALL 2002, Flys really well.
