What the coupling refers to is when the rudder is deflected, depending on where the center of pressure of the rudder is, it will induce a rolling moment coupled with the pure yaw moment that the rudder should produce. The idea is to balance the rudder area above and below the roll axis of the aircraft, so there is no coupling. It can be all calculated with math, but he most common approach is trial & error.
