Sure, do that all the time. If the new mounting holes are far enough away from the old ones, so the repositioned blind nuts have enough wood to bite into, then redrilling is all you need to do. If OTOH, the new hole overlap the old ones, you'll have to fill the old ones with epoxy before redrilling.
