I am using Hitec HS 5625 MG digitals on aileron / elevator/ flap and the standard Hitecs with carbonite gears on rudders.

Alan recommends any servo with over 63oz / inch for the flying surfaces. Personally I only use metal geared servos on aileron / elevator on jets and this model will do around 140 mph on a 15lb turbine. It is really up to you but I understand Ali Machinchy, Alans' test pilot is building one using cheap plastic geared servos. I expect if his servos fail he can just pull another model / turbine off the shelf!

I can't do that so I am going for overkill on the servos. I think you get much crisper response from digitals anyway.
