The "trying to level out is perfectly normal for a high wing trainer with lots of dehidral. For wanting to climb either you have too much up trim or just reducing power will be enough.

Try trimming the plane at half throttle for hands off level flight and this is for G2/G3 or a real live plane.

The main 2 reasons why a plane climbs is power along with elevator (there are other reasons). The elevator is for controlling airspeed and adding power will cause it to climb. Reducing power will cause it to decend.

Try trimming it as I described, the add some power without touching the elevator and see what I mean. Same thing for decending, reduce power just a tad without changing the elevator position and it will decend
