Hmm, I'd think the issue is that your trying to fly smoothly on high rates, which is almost impossible. Use low rates (about 12 degrees elevaotr at the most) for all flying except 3D.


On landings, it depends on where the CG is. If its tail heavy the tail will want to drop as it gets into ground effect. If more noseheavy, it'll stay more on a 2 point stance.
