Short answer: Yes you CAN damage it by using more servos. The BEC can pass a limited amount of current. Exceed that amount, and you burn it up.

The question is, will you? Maybe. The BEC might be able to handle it, and the manufacturer is just covering their butts by limiting it to one servo.
