I think the moment is too short... I flew a very short bipe not long ago and the rudder on that was sufficent to do a full roll in about a second, add a tiny bit of elevator and you got a really wicked snap!!

This is posibly the cause, as my Ultimate with quite long moment has no tendency whatsoever..

That's my guess based on experience.
