Connect you battery to the reciver so it resets the servo in it's neutral position. (Adjust the neutral position either manually with the linkage and/or with the "sub trim" in the radio menu until the control surface is level.
Then go to "End point" in your radio menu. If we take elevator for example:

-Highlight elevator in the radio end point menu
-Hold the elevator stick full down
-Dial the end point setting until you have desired throw on the servo
-Hold the elevator stick full up
--Dial the end point setting until you have desired throw on the servo


Don't only look at the numbers you dial in the menu because the throws can differ because of how the pushrods and linkages are attached.
I use the "End point" setting to do this, but the same thing can be done with the Dual Rates ( "D/R" ).
