before i could give you any advice on the plane let's look what you have, makes it easier!
your motor will turn an apc/e 11 x 8 at 9700 rpm on a 4S2P1700 (3400) and at that will pull 43A (13C). you would need a 50A esc. all that stuff will weight in at approx. 20 oz. complete with wiring. the static thrust is 6,2 lbs and dynamic thrust at 72 mph still is a good 3,2 lbs.
since all those 3 ft fliton-planes like jumping jack etc are not really precise and you said you want a pattern and not a 3D-plane, i would be looking at something with about 48'' to 50" span with an empty weight not over 35 oz.
that way, you'll end up with a TOW of 20 + 35 + RC 8 oz = 63 oz and have a fair wing loading for pattern.
i don't know the market very well, but i would not be going for the EXTRA/CAP/YAK etc. scale-type plane at this size, i'd rather have a scaled down f3a-plane. pilot of japan used to make balsa kits in this size (for .30 glow) of the then famous planes from yoshioka, akiba. don't know if they still make them, but compared to the current 3D-hype, those planes were rock solid flyers. seems nowadays all people ask is "does it do torque rolls?" who cares? wanna hover? buy a chopper!
