Well, any of the PAC planes are decent choices. I am partial to the Sequel myself, but they are all good aircraft. The only hitch is they are all fiberglass fuse kits if that is an issue.

But they are both full 2M aircraft and need at least a 1.40 to fly well.

If you are stuck on the 60-1.20 size airframe, then a Boxxer 60/90/120 would be a good bet. They are all balsa aircraft that build easy and fly well. They have one piece wings, however, which you said you do not want. You could easily enough change that to a 2 piece plug-in set up with a wing tube if you wanted that, since it's a scratch build.
