I should post pictures of my $600+ Blade CP Pro. Funny thing is, it looks just like a stock CP. Why? All the crashes and repairs. I figure I have about that much in it now. At this point, it's actually two wrecked CP's combined into one (a CP and CP Pro). Welcome to the wonderful world of helicopters! Seriously, it isn't easy flying these things. I also have a Blade CX and it still catches me off guard sometimes. You might want to invest in a good simulator program. In the long run, it will save you a lot of money and frustration. There is also "Radd's school of flight". Another good place to learn. I need to unlearn some bad habits and go through Radd's myself.

By the way, you sound like you already figured it out but the left side servo is channel 1 and the right side servo is channel 2 (tail towards you) with the orange wires facing forward (I'm looking at mine now). As for the tail slowly rotating, there is a "proportional" screw in the 4in1 you will have to adjust. Be careful turning it (use plastic screwdriver if you have one). It breaks easily. Just try lifting off just a little bit and see which way it turns then set it down, disconnect the battery (very important) and then turn the screw a little bit. Then test fly it again (not too high) and see if it helps. If it turns more then turn the screw the other way. It's trail and error to get it right.
