I'd recommend you download MotoCalc and play around with that before you buy anything. I've found it to be an excellent program to determine what you will need to get where you want to go. Full working version can be downloaded from
http://motocalc.com/ and good for 30 days demo. If you like to tinker and mix and match electric components on airplanes it is a great program. Otherwise you will end up blowing out your LiPo packs by overloading them, overloading your ESC, or wasting time putting something together that will not have the power to perform as you expected, etc.
As far as 100 MPH, based on MotoCalc data, I've determined that is likely out of my EDF budget. Seems like you can get to 75MPH cheap but 100MPH is going to cost you a lot more money in a much larger ESC, and LiPo packs. Although I did recently find a real cheap source in China for LiPo packs. Hoping they are as good as the reviews. Ordered a couple packs for my heli which were 20-30C 2200mAh for $32 a piece. Maybe I can afford to give 100MPH EDF a try after all!
