If using two of these switches...which I think is a bad idea,because they have to be hit twice(once to turn on and then once to turn off) so good luck getting a servo to do THAT!!!!
I would use just one of the DPDT and call it a day....its either in one position or the other,thus easier to hook up to a servo.
You also might want to try a solenoid to throw the switch instead of a servo,this one is 12vdc but might work with 7.2vdc

A basic understanding of reading schematics is also helpful......
