Assuming they are only slightly out of parallel (wing & stab) you will probably barely be able to detect it in flight and only during certain maneuvers. If you can prop up the plane in such a manner to make sure the stab is level THEN measure the difference at the wing tips. If needed an incidence meter can be rigged side-to-side to find/set level, then measure the wings.
