If you're concerned about temperatures then I'd assume you're more used to cars where it's used too much to get a tune instead of by ear. So long as you're using a correct fuel with adequate oil (the important part of fuel) then an engine will run at whatever temp it has if it's got no obstruction to the cooling air. Checking the temperature on the backplate doesn't indicate anything because you can touch a backplate at full throttle and it'll be cool all day long but it'll warm up slowly back at idle as heat soaks down from the cylinder. The bottom end of an engine is kept cool by the fresh intake of air and the evaporation of the fuel.
